How a moka pot works
A moka pot is built from three stacked chambers. The bottom chamber holds water and sits directly over the stove's heat. A funnel-shaped filter basket sits above it, packed with ground coffee. The top chamber collects the finished brew and is what you pour from.
As the water in the bottom chamber heats past around 90 °C (194 °F), it starts turning to steam. Steam takes up roughly 1,700 times more volume than the same amount of liquid water, so pressure builds quickly in the sealed bottom chamber — typically 1 to 1.5 bar. That pressure has nowhere to go but up, so it forces the hot water through the coffee grounds in the filter basket and up a central tube into the top chamber, where it collects as finished coffee. A small safety valve on the side vents excess pressure if it ever builds too high. The whole brew typically takes 3–5 minutes on medium heat.
Why it isn't "stovetop espresso"
The nickname is everywhere, but the pressure numbers make the difference clear: a moka pot tops out around 1–1.5 bar, while a real espresso machine forces water through the puck at roughly 9 bar. That ninefold difference is exactly why a moka pot can't produce true crema — the reddish-brown foam on a real espresso shot is an emulsion of CO₂ and oils that only forms under high, sustained pressure. A moka pot can produce a thin, foamy layer sometimes called "moka crema," but it's a different — and much less stable — thing. What you get instead is strong, concentrated, full-bodied coffee that sits somewhere between drip coffee and true espresso, which is exactly why it's earned its own category rather than being a poor man's espresso machine.

A brief history
The moka pot was invented in 1933 by Alfonso Bialetti in Crusinallo, Italy. The story goes that Bialetti was inspired by an early washing machine, in which boiling soapy water rose up a central tube and sprayed back down over the laundry — he adapted the same principle to push hot water through ground coffee instead. The pot's distinctive octagonal shape is said to be modeled on his wife's silhouette, and the name "moka" comes from Mokha, the historic coffee-trading port in Yemen.
